Tokwa at Baboy -or Tofu and Pork, is one of filipino favorite, and usually seen and eaten in special occassions with beer and some liquor drinks.We serve this as variand( ulam) , picka picka or appetizer ( Pulutan) .Together with vinegar and soy bean sauce with chopped onions and chilli, this can serve together with porridge( lugaw) , good partner for hungry tummy.
Here's how :
Ingredients:
1/2 kilo pork belly or pork ear and head( deboned) ,
4 pcs tofu, sliced
2 medium onion chopped
2 long green chilli sliced
3 pcs red chilli pepper chopped
3/4 cup vinegar
2 tbsp soy sauce
3 tbsp sugar
salt and pepper to taste
Procedure:
1.In a casserol, put pork meat/pork ears and head and pour 1 liter of water,season with salt and boil for about 1-2 hours or until tender.
2.In a frying pan,heat the oil and fry tofus until become crisp and golden brown.Set aside.
3.After boiling the pork meat/ear and head ,fry until become golden brown and crisp.Sliced the meat into 1-2 inch or bite size.
4.In a small bowl, combine onions,green chilli,red chilli, vinegar, soy sauce, sugar, salt and pepper ,set aside.
5.Place tofu and meat together in one plate then serve with vinegar-soy bean sauce.Enjoy!
