Ilocos Empanada- obviously this dish is came from Ilocos Region ,a pastry is made from rice flour, and vigan longganisa and some vegetables. This is a combination of Spanish-Filipino Food that from years,decades made and until now is one of the famous food in our country.
Now, I will share this recipe to everybody to know how,:
Ingredients:
Dough:
1
1/2 cups rice flour
1/2
cup water
orange
food coloring or annatto seeds(dilute in water)
1/4 cup butter
cooking
oil for greasing and frying
Filling:
5 pieces Vigan Longganisa, skin removed
1
unripe papaya, grated
1 medium
onion, chopped
2
gloves garlic minced
6 fresh eggs
salt and pepper to taste
For the Filling:
1. Heat pan and put oil , sautee garlic and onion.Add
the Vigan longganisa then season with salt and pepper, cook until become brown color.
2.Transfer
the mixture in a bowl ,add grated papaya then mix well. Set aside.
For the Dough:
3.In a mixing
bowl, combine flour, butter, water & anatto mixture and mix well
until dough become formed. Set aside.
4.Cut
the dough into 6 equal portions and roll it into balls. Let the dough cool for
20 minutes.
Assembly & Cooking:
5.Dredge flour into table to avoid the dough from sticking.
6.With the use of rolling pin,
each dough using your palm,flatten carefully until become circle-shape.
7.Put
3 tablespoons of filling on the top of flatten dough, then leave a space in the
middle for the raw egg.
8.Fold
and seal the sides, and trim the edges. Continue until all dough have been
consumed.
9.Heat
the pan and put oil, deep fry empanada for 3 minutes or until crisp.
10.Take off
the cooked empanada and drain on paper towel.
11.Serve
with garlic vinegar.Enjoy!
