Lumpiang Ubod Recipe (Bamboo Shoots Crepe Rolls)

Lumpiang Ubod -is a vegetable roll dish is a healthy food that we usually eat in different kinds of special occassions in the Philippines. Bamboo shoots is the main ingredient for this recipe ,however, some use coconut shoots from coconut trees almost same taste, and same deliscious.Here's how;

Lumpiang Ubod Recipe
Ingredients:
1/2 kilo Bamboo Shoots soaked in water
1 tbsp oil
1/4 kilo pork minced
2 gloves garlic crushed
1 medium onion thin strips
1 carrot strips
1 red/green bell pepper strips
1 sweet potato strips
1 stalk celery strips
1/4 cup water
1 tbsp corn flour
10 fresh lettuce leaves 
1 tbsp soy sauce
 2 tbsp sugar
1 tbsp fish sauce
1/2 cup boiled shrimps peeled
salt and pepper to taste
2 tbsp peanuts crushed 
For Crepe:
1 cup milk
1/2 cup all purpose flour
1/4 cup cornflour 
1/4 cup melted butter
1 egg
2 tbsp white sugar
For Garlic Sauce:
1 Gloves garlic minced
1 tbsp soy sauce
3 tbsp brown sugar
2 tbsp corn flour
1/2 cup water

 
 
Procedure:
1. In a pan, Heat oil and sautee garlic until light brown,put onion,wait until watery and put  meat and cook for about 10 minutes.
2. Add vegetables except lettuce.Cook for about 5 minutes
3.Put sugar,fish sauce,and soy sauce,stir until well combine.
4.In small mixing bowl, combine water and cornflour and mix well.
5.Pour cornflour mixture into vegetables and stir until sauce become thick.Set aside
6.In a mixing bowl, combine ingredients for Crepe and mix well.
7.In a frying pan, preheat and brush oil , pour crepe mixture for about 1/2 cup and hold pan and roll in the mixture around pan surface to be plate-like and wait for 2 minutes and flip over and wait for another 2 minutes.Repeat process until you finish up all crepe mixture.
8.In a saucepan, pour water, cornflour,brown sugar, soy sauce and garlic,and heat in a medium fire and stir until thickens.
9.In a plate,place crepe ,one lettuce on top and put atleast 2 tablespoons of vegetable mixture ,roll in .Repeat process until all crepe and vegetables rolled all.
10.Put garlic sauce on top or put in a saucer and put beside lumpiang ubod and top with crushed peanuts.
11.Serve with rice .Enjoy!
