Kare-Kare Recipe

Kare- Kare (coconut peanut stew- One complete meal,means one whole package, this recipe is made by oxtail, or usually choice o meat, together with coconut milk, peanut butter .For old fashioned recipe using fresh ingredients which are coconut milk,grinded peanuts,fully grinded glutinous rice or rice in traditional way and vegetables accompannied with condiment called shrimp paste.Shrimp paste is made from small shrimp fermented with sea salt for couple of weeks and you can cook this by sauteed garlic,onion ,.Some cook with pork , Kare-kare means curry modified by filipinos .Curry means all spices which includes garlic onion chilli ginger turmeric, but for this traditional dish only we include coconut ,peanut and vegetables.Filipinos' favorite food from previous years until now.
We prepare this dish in every daily meal ,and also every special occassions like christmas, new year, birthdays and many more .
So here's my recipe;
Oxtail Kare- kare
Ingredients:
 1/2 kilo Oxtail  
 2 gloves garlic crushed
1 medium onion chopped
1 medium banana heart sliced
2 cups string beans cut into 2 inches
2 eggplants sliced
2 cups pechay sliced
1/2 cup peanuts finely crushed
1 cup coconut milk
1/4 cup rice flour
1/2 cup water or beef broth
1 tbsp. honey or sugar
1 tbsp anatto seeds soak in 100ml hot water
salt and pepper to taste
For shrimp paste:
 1 cup small salted shrimp
1 tbsp olive oil
2 gloves garlic chopped
1 medium onion
3 tbsp honey or sugar
salt and pepper to taste.

Procedure:
1.Boil oxtail for about 2-3 hours until meat is tender.
2. Preheat the casserol and put oil and sautee garlic, onion and oxtail together with vegetables, peanut,and water and simmer for about 20 mins until vegetables are cook.
3.Put coconut milk and stir gradually for 2 minutes.
4.Dissolve rice flour in 1/2 cup water nd pour into casserol and stir until become thick sauce.
5.Put honey or sugar if desired.
6.Drained and separate anatto seeds into liquid and pour anatto liquid to casserol and stir.
7.Season with salt and pepper.
8.Serve with steamed rice and shrimp paste.Enjoy!
For Shrimp paste:
1.In a small pan, heat the oil and sautee garlic,onion and put salted shrimp into it.
2.Put honey and stir .
3.Simmer for about 5-10 minutes.
4. Season with salt and pepper.
5.Serve together with Kare kare.Enjoy!
