Dinakdakan-It is a mixed grilled pork with selected spices.This dish is originate from Ilocos Region which dinakdakan means grilled pork.And this is compared to sisig which is almost the same taste and way of preparation but different cut portions.
Here's our recipe
Ingredients
1/2 kilo pork (variation : pork ear,head, or belly)
1/4 kilo pork liver
2 tbsp pork brain boiled
2 gloves garlic crushed
1 tbsp rock salt
3 tbsp calamansi juice
3 tbps soy sauce
2 tbsp red chilli pepper chopped
3 pcs long green chilli sliced
2 medium red onion sliced
1 tbsp fish sauce
2 tbsp mayonaise
salt and pepper to taste
Procedure:
1.Boil pork belly,ear,head with salt and garlic in 1 1/2 hour or until become tender.
2.Grill Pork belly,ear,head and liver for 10-15 minutes, 5 minutes each turn until become brown color,set aside.
3.Slice pork meat ,ear ,head and liver .
4.In a mixing bowl, combine all ingredients including
pork belly,ear,head,liver ,porkbrain and onion,red chilli, green chilli ,fish
sauce,mayonaisesoy sauce,calamnsi and season with salt and pepper.
5.Serve with rice or any drinks you want.Enjoy!!!
