Adobo

 
It's either classic or modified. It's still Adobo. Adobo in morning, Adobo in lunch,Adobo in the evening.Yes! It is Adobo, all time favorite and it can be pork , chicken, pork and chicken, or chicken and hard boiled egg, or even kangkong leaves or sweet potato leaves, yes! it can be! More filipinos or most of them like adobo.

Some says this dish was from Spain brought to Philippines from spanish time and modified by filipinos and from then and beyond still a favorite food of some fellow filipinos and even foreign countries.
Some says it was origin from Philippines and years passing ,people modified and continue to love this food,
Years and decades came, still Adobo, different ways of cooking, different recipes.
So here's my version of my Adobo.
You can use chicken or pork for this recipe,so if you wanna try it, then you cook it.

Chicken Adobo
Ingredients:
1/2 kilos  chicken legs and wings
1 tbsp. lemon juice or calamansi juice
1 tbsp. olive oil
2 gloves garlic chopped
2 tbsp. red onion chopped
1 tsp. ginger (optional)
2 medium size potatoes sliced
2 pcs. dried basil leaves
1 tsp. whole peppercorn
1/2 cup water
80 ml. white vinegar
2 tbsp. soy sauce
lemon grass(optional)
salt and pepper to taste
Procedure:
1. In a clean bowl, put chicken and lemon juice and leave it for 15 mins.
2. Preheat the pan and put oil into it and sautee garlic, onion,and ginger in 1 minute and put chicken onto pan ,pour vinegar and simmer for about 10-15 minutes until acid evaporates.
3. Put potatoes, basil leaves and peppercorns , lemon grass and pour water  in meduim heat and let it simmer for 15-20 minutes.
4.Pour soy sauce and wait until 2 minutes until chicken and potato are done.
5.Season with salt and pepper.
6.Serve with steamed rice or fried rice. Enjoy!
