A simple salad with beans is our current proposal, only an intense lemon fragrance and strong oriental flavor of ginger, lemongrass and lime.
Piaget beans with ginger, lemongrass, lime and onion

Ingredients for 6 people:
½ pound small white beans, dry
1 tsp. tablespoon fresh ginger, grated
3 sprigs of lemongrass canned, chopped
juice of 1 ½ limes (lime)
2 onions, medium, cut into thin slices
1 cup olive oil
coarse salt, freshly ground pepper
Soak the beans overnight in plenty of cold water. In the morning rinse and boil in plenty of water until they are tender but not dissolved. Drain. Keep them in a large bowl.
• Pour into the blender the chopped sprigs of lemongrass, ginger, lime juice and the olive oil. Beat until it becomes a homogeneous paste.
• beans salted with coarse salt, pepper, pour the flavored dressing and toss well. Strewn over the onion slices and serve at the table.
TIP
If you want, add a cup of chopped coriander, which goes excellent with the flavor of the beans and all other herbs.
