Bicol Express /Sinilihan Recipe (Coconut Spicy Stew)

Bicol Express or Sinilihan is originately from Bicol Region,main ingredients for this recipe is the bird's eye chilli or we called Siling Labuyo  and Long Green Chilli Pepper or we called Siling Haba/Panigang.
This food with Coconut milk,choice of meat, peppers.This become Famous in Philippines and everytime we heard and eat this dish they remind us that you eat like Bicolanos because mostly they eat hot and spicy foods.
Here's my recipe:

Chicken Bicol Express
Ingrdients:
1/2 Kilo Breast chicken sliced
1 tbsp. olive oil
2 gloves garlic crushed
2 tbsp ginger minced
1 medium onion sliced
1/4 cup Labuyo
4 pcs. Long green chilli pepper sliced
1 cup beef broth
1 cup coconut cream
1 cup coconut milk
1 tbsp fish sauce
salt and pepper to taste
 
Procedure:
1.Preheat the pan, put oil and sautee garlic and ginger.Add onions and stir until onions become soft.
2.Put chicken and fish sauce and cook for about 10 minutes.
3.Add beef broth and coconut cream,stir and let simmer for 10 minutes.
4. Put chillis and stir until combined all ingredients.Leave some red chilli and green chilli for later garnishing/plating.
5.Add coconut milk and stir and simmer for another 5 minutes.Season with salt and pepper.Done.
6.Serve with rice.Enjoy!
